3 Easy & Delicious Casserole Recipes

1 Package Hotdogs - cut in 1" pieces
4 C Chili - homemade or canned
1 Can Refrigerated Biscuits - cut in 4s
2 C Cheddar Cheese - shredded
Spray a 9 x 13 baking dish with cooking spray
Mix hotdogs, chili, 1 cup of shredded cheddar and the cut biscuits.
Spread evenly into baking dish. Cover with foil
Bake @ 375 F for 30 minutes.
Remove foil and sprinkle on remaining 1 cup of shredded cheese.
Bake uncovered for an additional 20 minutes
****** Loaded Red Potato Casserole *******
2 - 3 lbs Medium Red Potatoes
1 lb Bacon - cooked & crumbled
3 - 4 Scallions - sliced
4 Tbsp Butter
2/3 C Milk
1 C Sour Cream - divided
2 C Cheddar Cheese - shredded
Boil potatoes until fork tender.
Cook bacon, let cool & crumble
Once potatoes are cool enough to handle, partially peel skin off & mash with
butter, milk, 2/3 cup of sour cream, half the scallions, cheddar cheese & a handful of bacon. Mix until
well combined
Place in a 9 x 13 casserole dish and top with remaining 1/3 cup of sour cream. Sprinkle on remaining
scallions, bacon & cheddar cheese.
Bake in a 375 F oven for 25 minutes.
******** Easy Taco Casserole *********
2 lbs Ground Beef
1 Medium Onion - chopped
1 1/2 C Salsa
1/4 C Taco Seasoning or 2 packages
3/4 C Mayonnaise
1/4 C Sour Cream
4 C Crushed Tortilla Chips - divided
4 C Shredded Cheddar Jack Cheese
Toppings: Chopped Tomatoes. Shredded Lettuce, Scallions & Sour Cream
In a large skillet brown the ground beef. Drain excess fat.
Add onions, salsa, taco seasoning, mayonnaise & sour cream. Stir until combined
In a 9 x 13 baking dish spread 2 cups crushed tortilla chips. Evenly spread half of
the meat mixture and top with 2 cups of shredded cheese. Place another layer of chips
and meat on top
Cover with foil.
Bake @ 350 F for 20 minutes.
Remove foil and spread remaining 2 cups of shredded cheese. Place back into oven for
10 - 15 minutes or until cheese has melted.
Top with chopped tomatoes, scallions. shredded lettuce and/or sour cream
