CABBAGE POTATO SOUP RECIPE
1 tablespoon extra virgin olive oil
1 onion, diced, (about 2 cups)
2 stalks of celery, thinly sliced
1/2 teaspoon ground coriander
1/2 teaspoon smoked paprika
1 teaspoon dried oregano
1 -15 ounces can of crushed (or diced) tomatoes
2 cups chicken bone broth
5 cups water
1 medium cabbage, thinly sliced (10-12 cups)
1 pound baby potatoes, cut into bite-sized pieces
Salt and pepper to taste
Parmesan cheese to serve

Heat olive oil in a heavy pot over medium-high heat. Once the oil is hot, add in the onions and celery. Give it a pinch of salt and saute for 5 minutes or until the onions are beginning to look translucent.

Stir in coriander, smoked paprika, and oregano before adding in the crushed tomatoes. Stir well and cook for 2 minutes.

Add the cabbage, salt, pepper, broth, and water. Stir well, turn up the heat, and bring to a boil. Then reduce the heat and simmer for 10 minutes, stirring occasionally.

Add in potatoes, and simmer for another 15 minutes or until the potatoes and cabbage are tender. Adjust seasonings as desired.

Ladle into your favorite bowl and serve with a hearty sprinkle of Parmesan cheese and a sprinkle of black pepper. Enjoy.

NOTES
Note: You can swap diced tomatoes for crushed tomatoes if you have them on hand. Try adding an extra layer of flavor by using fire-roasted tomatoes or tomatoes with basil.
Both savoy cabbage and green cabbage work really well in this recipe.

    I used to make one from a Jewish woman. It had brown sugar in it but I substituted that for molasses. MMMM.....adding sweet to cabbage soup is SO good.

    This is one of my favorite soups. My mom, who was Hungarian, used to make this, varying it with julienned yellow squash/zucchini with chopped fresh dill. Heaven!!

    I cooked this tonight. It was bomb. Seriously, make this for dinner or lunch. It’s fast, easy and super filling. I got a baguette for lunch with a rotisserie chicken and used the leftover meat in the soup along with the bread to dip. 10/10 I will be making this again. I will be trying a few changes and additions as well. This is a wonderful recipe. Thank you!

    Edit. Yes it is raining tonight. It was a wonderful soup to have in the belly for a nighttime walk in the rain.

    This exceeded my expectations. I used more spices in mine, including smoked paprika, and also added dried dill weed, one Bay leaf, and some turmeric/black pepper paste at the end. These combined with the spices you already had in it, was incredible! I threw in a heaping spoonful of plain yogurt too. It went amazing with some leftover farmers sausage. Thank you so much for this recipe. It's going to become a regular staple for me.
