Burnt food (coffee, sugar) contains a lot of acrylamide, which can cause cancer.

Coffee is grown in Malaysia since the 19th Century when it is known as British Malaya. At that time, the predominant cultivar was the famed Coffea Arabica. Then a type of fungal infection known as Coffee Rust devastated the coffee plantations in British Malaya. Coffea Liberica cultivar replaced Coffea Arabica as it was proven to be resistant to the coffee rust. Since then, it is the predominantly coffee cultivar grown in Malaysia. However the taste of Coffea Liberica is not as palatable as the taste of Arabica or Robusta. So the liberica beans are roasted in such method with sugar and margarine or vegetable shortening to create a unique palatable taste. The resulting coffee is strong and flavorful.

Oh, used to travel to Penang for work years ago & got to try a lot of local foods, but I don't recall getting to try this coffee. Looks like I missed out on something special!!

2:21 I know everybody uses butter for the roaster in south east Asia but no roaster in the West does that. Actually they don't use any additives at all.
