Callos is a dish common across Spain that has been adopted in the Philippines because of Spain's previous presence in the Philippines. It is made from ox tripe, smoked sausage, beans, and bell peppers slow-cooked in tomato sauce and spices; although some variations have emerged through the years.

130g Tomato Paste
Salt and Pepper
1 tsp Sugar

½ tsp Oregano
1 Bay Leaf
Fish Sauce
½ Cup Spanish Olives
400g Chick Peas
1 large Red Bell Pepper
Water
Beef Cube (optional)
1 tsp Liquid Seasoning (optional)

For Pressure cooking:
1 tsp Peppercorn
1 bay leaf
1 tbsp Salt
3 cups water
