Banana Chocolate Chip Muffins

Ingredients:
1 1/2 cups flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
3 medium ripe bananas 🍌
1 large egg, at room temperature
1/3 cup vegetable oil
1 teaspoon vanilla
1 cup chocolate chips* (optional)

*I use semi sweet chocolate chips

Directions:
Preheat oven to 375°F.
In a large bowl, combine dry ingredients. In a separate bowl, mash bananas. Add egg, oil, and vanilla to bananas and mix well. Stir in dry ingredients and chocolate chips until just moistened. Fill greased or paper lined muffin/cupcake cups 1/2-3/4 full.
Bake @ 375°F for 18-22 minutes. Cool in pan about 10 minutes then remove to wire rack to cool completely.
