Italian Wedding Soup is truly one of the grandest soups in this galaxy. While not traditionally served at Italian weddings (although it should be served at EVERY wedding because wedding food is usually lame-o), it got its name by marrying the likes juicy mini meatballs, vibrant vegetables and the most adorable pearl pasta in the very same soup!

My version uses sausage as the key player for my meatballs resulting in a flavor-infused broth so rich and lush (it's slightly sherry-based as well), the lucky person (or people) you serve it to may just propose and you'll have and Italian wedding right in your kitchen. Except if it's your kids or best friends. Just make then do the dishes after in return.

  • A trick I learned if you’ve over salted a dish is to cut a potato in half and throw it in and simmer for about 20-30 minutes! It will absorb some of the extra salt and restore the balance of flavors!

    Jeff, made this tonight and WOW....what flavor. My wife never liked Italian Wedding Soup....her experience was typically out of a can, or at Olive Garden. She was, to say, a little reticent to try it....but....after the first sip, then meatball.....she was sold. Your recipes are so much fun to make at try....thanks so much.

  • works great. i love that it has stainless steal pot inside youtube.com/post/UgkxG-7WiT7ocumjytOpHDFt632PL0pxX… and not the one with coating. we used to have a coated pot before, and the coating slowly peels, and i am sure went into the food that we cooked. Absolutely love stainless steel, and will not use a coated product again.This pot has many settings and many buttons, and i need to sit down with a manual to figure out which setting to use. I used the basic functions, and even though i am not technologically skilled, i turned it on and assembled it without any help.Very satisfied with this product overall.

    I made this last night turned out really good. The meatballs are amazing. I went with tube Basil instead of the real thing. Thinking I'll use fresh basil next time and maybe combine the garlic broth with some chicken broth. It's definitely one I'll make again and dial in the flavors to my liking.

    I made this for dinner tonight on a cold windy February day. OMG. This is freakin awesome soup! I didn’t have any Aci de peppe in the pantry so I used orzo instead. I left out the fresh basil, allergic and used fresh escarole instead of spinach. Used fresh garlic too. Even my picky husband ate two big bowls and said it was the best. Who am I to argue?

    Mmm... It looks and sounds so good. ATK did one that is more labor intense and not in the instant pot but one step they did was beat the meatball mixture in the mixer to keep the meatballs glued together. I forget the exact science but it does make for tight meatballs that don't fall apart even after freezing. I recommend you to all new instant pot users that I know. You rock!!!
