I really love Jeremy's constant representation of Filipino culture and cuisine. Our cuisine is simple but also complicated and I'm always amazed and happy whenever he really highlights and properly executes the cooking methods of every dish while still maintaining the traditional flavor profile of Filipino food.

I've been cooking for 23 years now, i went to school n' became a Chef when i was 19.. I must say that this guy is a badass! I am so proud of you Jeremy! I love the fusion, how he incorporated the beauty and rich flavors of our dishes to a more Americanized Fine-dining plating.. Every dish he made looked delicious and very well plated.
