WHOLESOME White Chicken Chili recipe, perfect for cold autumn days

White beans & chicken chili is a delicious and flavorful dish with a unique flavor profile. It is creamy, slightly spicy, and refreshing all at the same time. This white chili recipe is, moreover, a great source of protein (40g per serving). A great alternative to chili con carne for colder autumn days while also invoking memories of the passing summer.
It was my first time I ever tried white chicken chili and I do not want to miss it anymore. It is a versatile, tasty and easy-to-make dish. Moreover, it is also a rather healthy dish, IF you go easy on the cream. Enjoy!

INGREDIENTS (5 servings):
- 15 gram canola oil
- 600 gram chicken breast, raw, skinless
- 1 medium onion
- 200 gram red bell pepper
- (optional) a few spicy chili of your choice
- 4 garlic cloves
- ground coriander [1tsp / 2 gram]
- ground cumin [1 Tbsp / 6 gram]
- ground smoked chili [1tsp / 2 gram]
- half teaspoon dried oregano
- 3 cups chicken stock [750 ml]
- 500 gram canned white beans, e.g. Cannellini [rinsed & drained]
- 200 gram canned corn

This white beans & chicken chili recipe yields 5 servings. 380kcal with 35g of carbohydrates, 10g of fat and 40g of protein per serving (without toppings).
