Ingredients:
1-2cups cooked rice (preferably day-old rice, as it fries better)
4 eggs, lightly beaten
1/4 cup dried shrimp, (optional)
5 pieces Chinese sausage diced
1/2 cup mixed peas, carrot and corn fresh or frozen
1/2 cup green onions, chopped
2-4 tablespoons soy sauce
1 teaspoon sesame oil
Salt and pepper to taste
Cooking oil
Instructions:
Heat a large skillet or wok over medium-high heat. Add a tablespoon of cooking oil.
Add the beaten eggs to the skillet and scramble them until they are cooked through. Remove the scrambled eggs from the skillet and set aside.
In the same skillet, add another tablespoon of cooking oil if needed. Add the sausages and dried shrimp and stir fry for few minutes.
Add the onions and mixed vegetables cook for few minutes until they start to soften.cook until fragrant.
Add the cooked rice to the skillet, breaking up any clumps with a spatula. Stir-fry the rice with the other ingredients for a few minutes until it's heated through.
Add the soy sauce stirring well to coat the rice evenly. Adjust the amount of soy sauce according to your taste preference.
Add the cooked scrambled eggs back to the skillet, along with the chopped green onions. Stir-fry everything together for another minute.
Drizzle sesame oil over the fried rice and give it a final stir. Season with salt and pepper to taste.
Once everything is well combined and heated through, you can serve your Yang Chow fried rice hot as a main dish or as a side dish.
Optionally, garnish with additional chopped green onions before serving.
