I loved this so much mostly because I am Mexican and also he maintains the real taco not a cauliflower mixture with a tortilla on top.

I love this!! I just recently did a presentation about being vegan and Latina. I prepared tacos de nopales. The book Decolonize Your Diet was such a big help. Our indigenous ancestors ate a predominantly plant based diet with a small portion of meat. Plant based foods are closed to our culture than we’ve been led to believe :).

This gives Vegan food another level. Mexican flavors are da bomb! I think the battered mushroom in place of fish is genius.

I make some amazing TVP Tacos and Jack fruit pulled pork sandwiches. But this guy's stuff looks beyond anything I've ever done. He should come to NYC and open up a place here. He'd be famous in less than 30 days
