Typhoon shelter prawns or in Chinese: 避風塘炒虾, is a dish served in many Chinese restaurants in Hong Kong, Although this dish is usually prepared with using crab, garlic, scallion, red chilli as well as black beans, we have swapped the use of crabs with prawns because not everyone is comfortable to cook crabs at home.

This recipe is very easy to execute and as you can see from our photo of the dish, it looks rather presentable too - definitely worthy to be served to your guests on special occasions.

By the way, I think typhoon shelter crabs got famous (or more famous) when Sir Anthony Bourdain was filmed eating it on a boat in Hong Kong. If Sir Bourdain enjoyed it, we believe you will enjoy it. You gotta try making this dish at least once.

550g prawns with shell on - remove veins.
15g of minced ginger
5 pieces of dried chilli - deseeded
1 tablespoon of fermented dried black beans

    I think this dish would be perfect to serve for friends coming to dinner. I suppose you could pre-fry the crispy garlic and keep in an airtight jar beforehand. Tks Roland for another winner. I do love watching you at the wok!!!
