How To Cook HAWAIIAN OXTAIL SOUP

This is one of my favorite dishes especially when I visit the islands. One day, I was just craving for it and decided to make it for the family. Come and enjoy Hawaiian Oxtail Soup with us.

Ingredients:
2 packs oxtails (frozen OK)
Shiitake mushrooms
Mustard greens or Baby Bok Choy
Star anise - 2 pieces
Ginger, sliced or julienne
Orange peel or zest
Peanuts, about 1/8 cup (optional)
Cilantro for garnish (optional)
Salt and pepper
Fish sauce

Steps:
1. Par-boil the oxtails for 30 minutes then discard water. Rinse oxtails and place in clean pot.
2. Fill and submerge oxtails in water and bring to a boil.
3. Add orange peel/zest, star anise and ginger
4. Add salt and pepper to taste but leave room for adjustment
5. Allow to simmer for 1.5 hours
6. Check if meat has tenderized. If not, keep simmering for another .5 to 1 hour.
7. Once meat is fork-tender, add Shiitake mushrooms and allow to soften.
8. Add your choice of veggies like mustard greens or baby bok choy.
9. For extra flavor, add cilantro and fish sauce to taste. You can also add these to your bowls individually.
10. Enjoy!
