• 3/4 cup (150 grams) granulated sugar, plus 1 tablespoon for muffin tops
• 1/4 teaspoon fine sea salt
• 2 teaspoons baking powder
• 1/3 cup (80 ml) neutral-flavored oil; canola, vegetable and grape seed are great
• 1 large egg
• 1/3 to 1/2 cup (80 ml – 120 ml) milk; dairy and non-dairy both work
• 1 ½ teaspoons vanilla extract
• 6 to 8 ounces fresh or frozen blueberries; see note below about frozen berries (about 1 cup)

I’ve made this a dozen times already. Love love love how easy it is. It cut out many non essential steps, like using oil instead of melting butter. Make it possible to bake for breakfast without having to wake up super early!

Excellent EASY recipe! Love it. I used coconut milk rather than whole milk, doubled all the ingredients, and in addition to the blueberries, I added some dark chocolate chunks I had on hand. Got 20 standard size muffins that were moist, delicious, but not overly sweet. Thanks for making muffins for my grandsons a breeze!

I just made these and for the first time, I had the muffin top that I almost gave up on🍪 I used lemon instead of vanilla and the turned out great! Finally, a recipe you can jump out of bed and have it ready in 30 min❤️

Just tried it, awesome. I separated my frozen berry mix and made a batch of blueberry, BlackBerry and raspberry and they all turned out great. You could easily cut the sugar in half tho
