Best Fudgy Brownies - Vegan, Gluten Free, Refined Sugar Free | Healthy Eggless Brownies

These Vegan & Gluten free Brownies are the perfect healthy and yummy treat to satisfy those sweet tooth cravings !! They are rich, moist, fudgy and the best part is instead of refined sugar these brownies are sweetened just by dates !!

INGREDIENTS
*3/4 cup seedless Dates/ खजूर
*1/4 cup Soy Milk or any plant based milk of your choice/ सोया मिल्क
*3 tbsp Coconut Oil/ नारियल तेल
*1/2 tsp Cinnamon powder/ दालचीनी पाउडर
*1/4 tsp Salt/ नमक
*2 tbsp Flaxseed powder + 3 tbsp water/ अलसी पाउडर+ पानी
*1/3 tsp Baking soda/ बेकिंग सोडा
*1/2 cup 90% dark Chocolate, chopped ( I’ve used Lindt’s 90%. That is quite bitter. You can use any dark chocolate just make sure if you use less than 90% like 70% or 50 % which is sweeter than this one, reduce the quantity of date paste accordingly to avoid access sweetness )/ डार्क चोक्लेट
*1/4 cup dark Chocolate chips ( I’ve used 70% dark chocolate ) / डार्क चोक्लेट चिप्स
*1/2 cup oat flour/ ओट्स आटा

INSTRUCTIONS
1- For the oat flour, add some oats in a grinder or blender and blend them into a fine powder.
2- For flaxseed powder, add some flaxseeds in a grinder or blender and blend into a fine powder.
3- Now 2 tbsp flaxseed powder in a small bowl, along with 3 tbsp water. Give it a mix and let this mixture rest for around 15 minutes or until it thickens and resembles a gel like consistency. We’ll use this gel as an egg replacement.
4- For the date paste, add dates in blender or food processor followed by 1/4 cup milk and blend them into a smooth and creamy paste.
5- To melt the chocolate, heat up some water in a saucepan. Place a heat proof bowl on top of it and add in chocolate. Stir till chocolate melts. Turn off the heat and let it cool completely.
6- Now add coconut oil and date paste in the melted chocolate and give a good mix. Add in the flax gel and continue mixing till well combined. Now add oat four, salt, cinnamon powder, baking soda and give a gentle mix. Mix in dark chocolate chips and transfer the batter in a parchment paper lined square baking dish. Bake in a preheated oven at 180°C/ 350°F for around 40-45 minutes. Allow to cool completely for 30-40 minutes. Slice them up and enjoy !!
