The best tasting Vietnamese Beef Stew (Bo Kho) slow cooker

You will love this Vietnamese version of the Beef Stew! So tasty and complex and very easy to make.

Use beef shank, striplion or chuck and cut into cubes. I wash the beef with cold water and pat dry. Marinade the beef with two tablespoon of fish sauce, minced lemongrass, garlic and shallots, 1/2 bag of the bo kho seasoning, 1 tbsp of Lipton onion recipe. Let the marinated beef sit for 30 minutes.

Sear at the beefs until it's brown and transfer to a slow cooker pot.

To make the broth - saute minced garlic, shallot, four large bruised stalk lemongrass, one cinnamon stick four star anise. Add one carton of chicken broth, one can of coconut water. A chicken powder, fish sauce, 2 tbsp palm sugar, 1 tbsp of the Lipton onion mix. Bring the broth to boil and transfer the broth to this slow cooker.

In the same pan sear up three large carrots and chopped onions. Add the rest of the bo Kho seasoning mix. One can of tomato sauce. Mix well and transfer to the slow cooker. Cook for 4 hours.

Serve the stew with baguette or over white rice or noodle. Garnish with Thai basil.
