Preparation time 20 minutes
Cooking time 30-35 minutes
Serve 2-4

Ingredients
For Boiling Vegetables
1 medium Cauliflower, florets, फूलगोभी
2 no Carrots, roughly chopped, गाजर
½ cup Green peas, हरी मटर
4 medium Potatoes, diced, आलू
1 medium Capsicum, roughly chopped, शिमला मिर्च
Salt to taste, नमक स्वादअनुसार
⅓ cup Butter, cubed, मक्खन
2 cups Water, पानी

For Pav Bhaji
2 tbsp Oil, तेल
2 large Onion, chopped, प्याज
3-4 no. Green chillies, chopped, हरी मिर्च
1 tbsp Tender Coriander stems, chopped, धनिया के डंठल
2 medium Tomatoes, chopped, टमाटर
1 large Capsicum, chopped, शिमला मिर्च
½ tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
½ tbsp Everest Kashmirilal red chili powder, एवेरेस्ट कश्मीरी लाल मिर्च पाउडर
1 tbsp Everest Pav Bhaji masala, एवेरेस्ट पाव भाजी मसाला
Salt to taste, नमक स्वादअनुसार
¼ cup water, पानी
Boiled & mashed vegetables, उबली सब्जियाँ
2 tbsp Butter (cubed & for finishing) मक्खन

For Bunny Chow
1-2 Burger buns, बर्गर बन
1 whole Bread loaf, cut in half, ब्रेड लोफ
Prepared Pav Bhaji, तयार की हुई पाव भाजी
Processed Cheese, grated, चीज़
1 tsp Butter, for toasting, मक्खन

Garnish
Coriander sprig, धनिया पत्ता
Onions, chopped, प्याज
Lemon wedges, नींबू की फांक

Process
For Boiling Vegetables
In a pressure cooker, add cauliflower, carrots, green peas, potatoes, capsicum, salt to taste, butter and water.
Cover it with a lid and cook for 4-5 whistles or until cooked well.
Mash it with the help of masher and keep it aside for further use.

For Pav Bhaji
In a kadai or flat pan, heat oil, add onions and saute for 3-4 minutes until translucent.
Add green chilies, tender coriander stems and saute it for a minute.
Add tomatoes, capsicum and cook for a while.
Add ginger garlic paste, Everest kashmirilal red chili powder, Everest pav bhaji masala, salt to taste, water and mix it well.
Add boiled vegetables and simmer for a while until cooked well.
Finish it with some butter and keep it aside for further use.

For Bunny Chow
Take a burger bun or a bread loaf, make a hole and scope out the bread from the middle.
Add prepared pav bhaji, grated cheese and toast it in a pan with butter. Cook it for 2-3 minutes on medium flames.
Transfer it to a serving dish, garnish it with onions and coriander sprig.
Serve hot.
