SOUTHERN STYLE CANDIED YAMS STOVE TOP

INGREDIENTS

2lb sweet potatoes (about 5 sweet potatoes depending on size)
1 cup dark brown sugar or light brown sugar
1/2 cup white sugar
1/2 of a naval orange
1 tablespoon cinnamon
1/4 tsp nutmeg
3 tablespoons of water
1 tbsp vanilla extract
1/2 stick salted butter

INSTRUCTIONS

Scrub, peel and slice your yams into 1/2 inch rounds. In a medium pot over medium low heat 5/6, combine the sweet potatoes and the rest of the ingredients (except for the butter). Stir the sweet potatoes until coated in the sugar mixture.

Let it come to a boil. Cover (but not all the way) then simmer for about 50 minutes or until the yams are nice and tender when slightly pierced with the tines of a fork or taste. If the yam is still a bit hard. Let it cook a bit longer.

Remove the top then set stove to medium. remove the yams from the pot and put them in a baking dish. Let the cooking liquid come to a boil. Stirring occasionally until the cooking liquid reduces about 10 minute or until it looks like syrup. Remove the pot from the stove and pour the liquid on top of the yams.

Next cut up 1/2 stick of butter and place it on top oh the Canfield yams as seen in the video. After 5 to 10 minutes all the butter should have dissolved into the candied yams. place them into the oven until you are ready to serve them.

    Yes DO NOT make them too thin, because I did about 10 years ago I was in charge of thanksgiving dinner and I made candid yams and made them to thin and made like a candid yams apple sauce and I still hear about it to this day from my family lOl it was good but apple sauce like.
