You're correct, it wasn't right. 😏 The small dish is just for putting the strainer on after you've strained the tea directly into the cup.

The amount of milk, thus the colour is purely personal choice.

Why not butter ? Butter is used to enhance the taste of everything and depending on the ingredients of the sandwich , even toastie , as if it's fried egg , sausages or tinned tomatoes etc the juices will make the bread very soggy and the butter will stop this . Tea wise the darker the tea the stonger it is ( there is a saying that if it's dark it's called builders tea , it gives them strength lol) , fill a cup / mug half way , add sugar and put a small amount of milk in , taste it and add milk to your taste ( maybe like you have your coffee )
