Ingredients:
1. Maash Dal (Urid Lentils) 1 cup- needs to be soaked overnight
2. 1 large sliced onion
3. 3 tomatoes (cut in halves)
4. 8 garlic cloves & 1 inch ginger (crushed)
5. Spices for masala:
1 1/2 tsp red chilli powder
1/2 tsp turmeric powder
1 tsp cumin powder
1 tsp coriander powder
1 tsp fenugreek leaves
1 tsp salt

6. Spices to add to the dal in the instant pot:
1/4 tsp salt
1/4 tsp turmeric powder
1/4 tap red chilli powder

For garnishing:
1. 1/4 tsp garam masala
2. Julienned of ginger
3. Coriander

Method:
1. Add the dal to the instant pot with enough water so it’s covered, then add the salt, red chilli powder & turmeric powder. Stir it thoroughly and set it on high for around 8 minutes. We like our dal soft but if you like a slight bite to it then cook it for less time.
2. On high flame add the onions to a pan, fry them until golden and add a splash of water before adding the garlic abd ginger paste. Cook until for a few minutes before adding the tomatoes and then cook the tomatoes still on high for a couple of minutes, adding splashes of water.
Next turn the flame down to low and add enough water to help the tomatoes soften, cover and cook for 5 minutes.
3. Remove the lid, turn the flame up to medium to high and mash the tomatoes and add the spices, cook until masala is ready
4. By now the dal from the instant pot should be cooked, turn the flame down to low and add the to the masala and mix everything together for a couple of minutes.
5. Add garam masala and garbish eith julienes if ginger and coriander. Serve with roti, paratha or naan bread.
