Join Chris Morocco in the Bon Appétit Test Kitchen as he makes healthy breakfast sandwiches. You may not mistake these jammy-crisp, slow-cooked onions for bacon, but they are truly exceptional as a stand-in, giving a huge blast of umami to create a truly satisfying breakfast sandwich.

"a little mixey-mix" looks like morocco has been hanging around brad a lot
  • Chris: “We need something green because health” Me thinking: * oh like spinach or something * Chris: Green hot sauce
  • according to chris, red onions are: -creamy -luscious -plump -smokey -bacon -crispy -jammy -chewy -unctuous

  • @DJBarrister
Chris is the only person who will use the words "unctuous" and "mixy mix" in the same video.

Makes oven roasted red onion for sandwich. My brain when i see the thumbnail : PURPLE SAUSAGE PATTY
  • At this point I feel like every single ingredient has "some kind of umami richness" in it

"Listen. Go out, live your life, party like there's no tomorrow, just know that there's always a breakfast sandwich available the next morning if you need it. Okay?" that is the most comforting thing I've ever heard.

I want someone to talk about me the way Chris talks about red onions.
  • @SJBluver
Me, small brain: "Tastes like vegetables" Chris, galaxy brain: "Vegetal, kind of herbaceousness quality to it"
  • Chris talks about red onions like he’s writing a novel - 5 star reviews all around
  • @michaelhoey9001
"I admitted that there was shell in there, I did the right thing" - man, i love you Chris Morocco
  • I actually remember Chris coming over, in one of Andy's videos a while ago, and showing him what must have been a prototype of this sandwich. Saying that he was considering hot sauce for the green component. Edit: I found it; it's in Andy's herb rice video! Interesting to see that little behind-the-scenes discussion during the development of the recipe.
  • Chris: Umami, Umami, Umami. Delaney: Oh...Umami. Chris: YES EXACTLY!!! Looks right at camera
  • @PurpleNothing
