    I do the pour over method. I buy cracked corn. 25 lbs 25 lbs brown sugar, amylase, daddy yeast. Heat water to 170, pour into the can and cook for an hour. Then amylase at 130, sugars and stir. Then at 90 add yeast. Takes 7 days or so. Then distill 8 gal in a 10 gallon still. I get 120-150 proof and about 2.5-3 gallons of shine.

    Sounds like you should’ve hit up your local malt house for that really nice malted corn

    Cut corn is easier to deal with. And it's usually best to do a protein rest, @125f, when dealing with the high protein feed corn

    You really need to do this with some of the heritage corn varieties. Bloody Butcher corn is a great choice.

    The best corn grinder I found is a buffed coffee grinder. Model 750 crusher for corn.
