Abgoosht, also known as Dizi, is a traditional Persian stew with a special place in Iranian cuisine. The preparation of abgoosht begins with soaking chickpeas and white beans overnight to ensure they cook thoroughly. The lamb, preferably bone-in for added flavor, is browned with onions and spices in a large pot. Potatoes, tomatoes, soaked beans, and chickpeas are added. The mixture is covered with water and simmered for several hours until all ingredients are tender. A distinctive aspect of serving abgoosht involves separating the broth from the solid ingredients. The broth is enjoyed as a soup, while the remaining ingredients are mashed together, often with flatbread, to create a thick paste called "goosht koobideh." This unique method of serving makes abgoosht a communal and interactive meal, deeply rooted in Persian culinary traditions.
