Gordon Ramsay's Chicken Fricassee is a classic French dish reimagined by the acclaimed chef. Ingredients:
2 tbsp olive oil
8 chicken pieces (4 drumsticks and 4 thighs)
1/4 lb. thick bacon, chopped into strips
4 garlic cloves, peeled and crushed
1/2 lb. white button mushrooms, halved
1 bay leaf
2 rosemary sprigs
2 thyme sprigs, leaves only
1 1/2 oz. brandy
1 3/4 cups chicken stock
Sea salt and freshly ground black pepper

Directions:
00:00 Begin chicken fricassee by browning the chicken in a hot pan after seasoning it with salt and pepper.

  • I make this recipe a bit differently by browning flour and making a roux and make homemade noodles instead of potatoes which I got from my German grandmother It's out of this world along with her traditional Sauer Braten recipe. Oh la la.

  • The Process (Chicken Fricasse): - Get Olive Oil in a pan to medium heat - Season the chicken and sear in pan for 2-3min - Keep searing and rotating chicken and add Pancetta - Once chciken is seared on all sides add garlic, mushrooms, bay leaf, rosemary and thyme - Add brandy and flambe, then lower heat to simer 2-3min - Add stock and cook uncovered on a simmer for 10min - Cover and cook a further 15-20min - Remove cooked chicken and garlic, bay leaves and sprigs - Put the sauce on high to reduce (I added arrowroot flour to further thicken it) The Ingredients (Chicken Fricasse): - Olive Oil - 800 chicken pieces - Salt & Pepper - 150g Pancetta - 4 garlic cloves - 150g chestnut mushrooms (Halved) -1 bay leaf - 2 rosemary sprigs - 2 thyme sprigs - 75ml brandy - 450ml chicken stock - Parsley chopped

    I have tried this recipe twice now and I have come to the conclusion that it is shite. The first time I thought I had done a few things wrong so I adjusted accordingly but alas it was still shite. I wonder if Ramsay has left out some important information in this vid.
