When I make Miles sweet potato, I just wash it, poke a few holes in it, and put it in the oven at 400 for an hour. Then take it out and the skin comes right off with my fingers, then all I have to do is mash it with a fork. Super simple, but longer cooking time. But the way you make it provides him more water, so that’s a plus side to your method.
