    Hello, Chef Enrico!! Of all the beef osso buco I've studied in preparation for my joint families Spring dinner, this version, for me, is the most organized for 12 people. I will have 11 persons I must please, and this recipe seems to be most trustworthy. I say this because although you use several pans, the steps are clear, readily available ingredients, and I can easily adjust the sofrito for my taste, and have my butcher cut each beef(or veal) portion to my thickness preference. The wine I think you used is Pinot grigio, which is most agreeable. Thank you so very much for this presentation. I see this recipe can also be applied to lamb shanks with some addition of rosemary herbs. And, your creamy rice risotto was simple enough to teach my young granddaughters. Mangia, mangia!

    Why are all the young ppl mispronouncing Osso Buco? It’s disrespectful! If you can not correctly pronounce the name of a very old dish, you can not properly cook a very old dish either. Comments say it looks good, and it does…….. so correct your pronunciation 😊 please Thank you 😊
