I'm making Moin Moin - a Nigerian steamed bean pudding.

I'm not following a precise recipe for this, just doing it by eye, but in case you want a list of ingredients (sans quantities), here's what I used:
Dried red beans, soaked and peeled
Tomatoes
Onions
Hot pepper (normally, fresh scotch bonnet peppers, but I used fried chilli flakes in oil)
Vegetable oil (mine was combined with the chillies)
Stock cubes
Dried crayfish (if you can't find this, you could use shrimp paste or something like that)
Boiled egg
Cooked mackerel
Water

  • Heh ... In north Germany "Moin Moin" is a greeting. "Morning morning" ... but used at any time of day and night.

  • Mike, one thing I observed in Babatunde's method of remove the husk is he recycles the water he used but keeping a cup under the collander. It was so nice to see him conserve water in that way.

  • If you are still interested in a substitute for those leaves I will suggest using dried husks/ears of corn (the ones that are around it) that dish looks a lot like mexican tamales.

    I think you may need to soaking the beans a little longer and then see if the skin come off easier.

    Sorry I’m super late on my comment for this video but hi Atomic Shrimp, first off I love your videos! Secondly, I’m a Nigerian American and I love moin moin so here’s a few tips when you’re making it: 1. To make the peeling process easier, just rinse the beans briefly and then drop them into a blender and pulse! (No lengthy soaking required, I promise!) By pulsing the beans in the blender you agitate them enough to remove the skin, but not enough to break them apart. 2. In regards to finding something else to cook the moin moin in, use aluminum foil, and almost fold it into a little square package with the top open. Then spoon the bean mixture in and roll it closed!
