Kachi is one of the delicious and popular Iranian dishes, which is usually consumed as an auxiliary and strengthening food. Kachi has many different recipes and it can be prepared in many different ways.
Of course, the most important use of kachi among us Iranians is for women who use this auxiliary food after childbirth or during menstruation to restore their physical strength.

first stage

First, we sift the flour twice, then we pour the sifted flour into a suitable pot and roast it on a low heat until the raw smell of the flour is removed. Next, we add oil and butter to the flour.

second stage

Now we have to fry the flour mixture a little until it turns golden, you don't need to fry the flour too much so that it changes color completely. Next, we mix water with rock candy, cardamom powder and brewed saffron in another container until they become uniform.

third stage

At this stage, we add the mixture of water and other ingredients to the pot containing the flour and stir continuously until it starts to thicken. Now it's time to add pistachio, almond and walnut slices. After adding these, we mix well ،then we have to close the lid of the pot and leave the kachi on very low heat for about 30 minutes until it is ready.

fourth stage

It is better to stir the kachi every few minutes so that it does not stick. In the last 10 minutes of cooking kachi, we add rose water to the pot, after the kachi reaches the desired consistency, we take it off the heat and set it aside.

Finally, put the kachi in the desired dish and decorate it with cinnamon, pistachio powder or anything else according to your taste.

Kichi is the best option after childbirth or during menstruation
