Handmade, homemade pasta that she rolls and cuts on her own (because she knows exactly how thickly to roll out the pasta before cutting).And everything she makes is seasonal and classic regional Italian cuisine. I hope you are learning from her because her knowledge is a gift and inheriting that from her will be one of the most special legacies you get.
