Torta de Jamón - A Better Ham Sandwich

A well-made ham torta makes a ham sandwich look puny. First, it’s the bread, the telera with its crustiness and soft crumb. And there are the bean spread and tangy crema, the avocado and tomato, the pickled chiles and the cheese–either crumbly fresh or gooey melted. There’s a lot going on here.

Rick: have always loved watching you share your enthusiasm and love for the cuisine of Mexico. So glad that the One Plate At A Time episodes are getting added bit by bit. Hope that Deann & Lanie are doing well. Always enjoyed when they appeared on the show.
  • Omgosh you just took me back to my childhood when my family drove to Mexico City we would stop at the little towns and they would sell these tortas Omgosh so delicious 😋

Love this man's cooking style!! Been watching since PBS ❤❤❤❤❤ Sammy looks delicious
  • I admire a great chef who will admit to small mistakes or omissions. It is a sign of confidence and a wonderful quality for everyone. Bravo Rick. Oh indeed, those are not sandwich's in the regular sense. I could not choose between the two. I love a warm sandwich but a cold one is very portable and convenient.

I remember my first torta in El Paso, TX. It was FAB!!!

Yum, I had one of those 40+ years ago at a stand outside the Museum of Anthropology in CDMX. Great memories!

Tortas de jamón y queso - the mainstay torta of México! When I feel in a 'basic' mood I get a torta de pierna. My local lonchería puts the sliced pork leg on the bread with mayo/crema, onion, tomato, and a little cabbage then puts it in a panini press. I schlep it home and add some homemade sauerkraut and mustard. Mmmm!
  • I'm a huge sandwich lover! And I tried my very first torta recently. Wow, yum! How did I go this long without one? Now I can make my own at home. Thank you!

I firmly believe that the person making your YouTube video thumbnails dislikes you. I, on the other hand, love you and your food! <3

I remember many years ago (1985, specifically) we were having lunch with some Chinese journalists working in Mexico City for the Xinhua News Agency. We were talking about the differences between our cultures (I was 13, 14 years old) and my dad asked which was their favourite Mexican dish. One of them said, without fear or hesitation: TORTAS DE JAMÓN. What a lovely memory!

And here I thought I was the only one that liked putting beans spread on my tortas. Thanks for the crema ranchera tip. I'm with you on the warm sandwiches, they always taste better to me.

El Chavo 🥪 I remember how I would buy ham by the price, rather than the weight, since we were on a tight peso budget. I'd go to the deli counter in the grocery store and the ladies would be calling out to people, and I'd say, give me 25 pesos of ham. Sometimes my husband would buy by the weight, "un quarto". He'd get caught by surprise with the price sometimes. Our favorite ham, "york" style, was pricey.
  • Thank You Chef! Now I need a Torta!
