    Anthony was the real deal in the celebrity chef world. No catch phrases or crappy recipes cooked too quickly. Too bad life was hell for him.

    I loved watching him on those nights when I couldn't sleep or early in the morning with coffee.. I wonder if he knew how famous he really was. Just in restaurant circles but by people who would never be able to travel around the world. He gave us something we would never ever have enjoyed. I will continue to watch his shows, and will hate knowing there will be no more new ones.

    I've tried this both ways. Waiting and not waiting. Honestly, I could not tell a difference. What really made a difference was the marbeling. The more it had the better the texture and taste. Hard to wrong with the ribeye because of this.

    Great tip. One more thing. Get a small resting rack to keep it off the cutting board. Wood is an insulator. The steak will keep cooking at a higher rate right on the cutting board than it would completely in the air. And it keeps the side against the cutting board from steaming as well

    I was told the best way to cook a steak (in a pan) is using very high temperature otherwise the steak gets tough.I worked in a very popular steakhouse once (Joe's Steakhouse) and they cooked their steaks over a kindling wood fire.They'd get these small sticks of very dry kindling burning in a bright blaze and then quickly cook the steak (in a long handled grilling basket) over it.Customers from all over the country loved them!

  • I've heard this said before(let it rest), but never as colorfully as Anthony has put it. He had such a wonderful way of putting things, and those experiences he shared with us on television were sometimes well beyond what we'll ever experience in our own life. ....and perhaps even in our dreams.

    Best way to make a steak is the reverse sear method. Pre-heat the oven to 250, stick the temperature probe of an in-oven thermometer into the middle of the steak, set the temperature alarm to go off at 125-129F, and stick it into the oven. It usually takes around 45 minutes to warm up but depends on the thickness of the steak. When the internal temp gets up to 125 pull it out and let it sit for 10-15 minutes. Then, quickly the sear the outside of the steak in a screaming hot cast iron pan coated in coconut oil and bast the steak with melted butter. I even have a $150 sous vide cooker and think the reverse sear method tastes better. You get a juicy steak that is a perfectly even medium rare all the way throughout the middle and a crispy, flavorful crust on the outside.
