CARNE CON CHILE COLORADO | Beef In Red Chile Sauce ❤

This CARNE CON CHILE COLORADO is a delicious Mexican dish stewed in a red Chile sauce. It is a very versatile dish, it is one if Mexico's favorite dishes for weddings, it can go from being served at a wedding to being served at home in burritos, gorditas, tacos, tostadas or any way you like. I love serving this amazing dish with Mexican red rice and frijoles de la olla and freshly made flour tortillas. This dish is one of my absolute favorite dishes because it is hearty and packed with flavor. ❤

INGREDIENTS----------------
2 1/2 lbs. Chuck roast (cubed 1 inch size)
6 guajillo chiles (clean and seeds and veins removed)
1 Ancho chile (cleaned and seeds and veins removed)
2 Chile Puya ( cleaned and seeds and veins removed) you can leave these out, little heat.
3 tomatillos
2-3 tsp vegetable oil (for searing)
1/2 chopped onion
2 bay leaves
1 tsp whole cumin (freshly ground)
1 tsp black peppercorns (freshly ground)
3 large garlic cloves (blender)
2 whole Allspice (freshly ground)
1 1/2 C. Water for blender
1 to 1 1/2 C. water (in pot you decide amount)
2 tsp Mexican oregano
1 Tbsp Chicken bouillon
2 tsp All purpose flour
1 1/2 tsp brown sugar (to sear)
salt (to sear)
pepper (to your liking)

    Well Rachel….it’s finally happened. My sweet Mexican husband of 50 years just made the comment that my cooking of Mexican recipes would give his dear departed mother a run for her money. I was schooled by her for the first year of marriage but then we moved far from home. I’ve mastered maybe 15 dishes over the last 50 years but since I started following you he now experience’s recipes that he has never tasted. He’s a happy man. Not bad for a girl from Scotland.     The best thing about Rachels directions they are slow enough and precise for me to annotate. I made this for myself FIRST before taking in on to my old car buddies. We all have vehicles that were made in the 50s-60s. I knew it was good when all I came back home with is a scraped down empty pot. That was 6 pounds of chuck roast...G....O....N....E, a 24 pack of tortillas, rice also between 5 guys.

  • Hi Rachel I’m so grateful I found your channel. I wanted to share something very special. My middle son favorite food is chili Colorado beans and rice. I have always been intimidated about cooking the CC. So I have never made it. But my son since he was a child has always ordered chilicolorado. As a mother of now this 30 yo son I felt guilty. So when following you on the CC YouTube episode. I said to myself “hey I can do this” so I followed the recipe and the steps I called my son told him I made it. So he rolled up a few minutes later in his patrol car and ate. He took his bite his looked up at me and smiled “this is great “. I told him thank Rachel. He told me he was going to tell his new bride to follow you. With all my love thank you for helping me make my boy happy.

  • Absolutely wonderful! This was my favorite dish. My Mom would cook this for me every time I needed cheering up when I was a teenager. She just knew when I needed some one on one time with her! She passed away some time ago. My biggest regret was that I never learned how she prepared it. That you so much for your excellent video. I can't wait to try it out and enjoy a nice dinner and reminisce about my mom.
