My children's favorite pasta recipe! I do it every weekend! Incredibly delicious! Noodles with 🐮 minced meat. Simple and very tasty! Everyone will be amazed!
Ragout sauce, a hearty and traditional Italian dish, is prepared by frying chopped onions, garlic, carrots and celery in olive oil together with minced meat. As soon as vegetables and meat are cooked, dosing tomatoes are added and the sauce is slowly simmering to develop their rich taste. As a variant, dry noodles are placed directly into the sauce and cooked together for 15 minutes until they are al dente so that they can absorb the aromas of the sauce. The result is a delicious dish with a delicious tomato sauce, enriched with the aromatic flavors of onions, garlic, carrots and celery, everything served with Rigatoni noodles-a real pleasure for pasta enthusiasts!

Ingredients (4-5 portions)

olive oil
1 onion, finely chopped
3 cloves of garlic, crushed and chopped
2 rods of celery, chopped
1 carrot, grated
🐮 400 g (14 oz) minced meat
1 teaspoon dried oregano
1 tablespoon of tomato paste
200 g (1 cup) tomatoes from the can
300 g (10.5 OZ) Penne-Grobate pasta
500 g (2.5 cups) chicken broth
salt and pepper

A handful of fresh basil

✅ Before serving grated Parmigiano Reggiano or aromatic goat cheese to taste.

✅ Serve as soon as you have mixed the sauce with pasta!

  • I am from Sri Lanka. I made this recipe with little changes. I add chicken and also salt and pepper. Phamasan cheese not available and I add mozerella cheese. Anyway it was very tasty and different from that I prepared earlier. Thank you very much.

  • To make a perfect Mirepoix, all the ingredients must be cut into the same size. As a Chef with 40 years of experience, I suggest a single whole clove of garlic to add aroma and then remove it. Red wine, half a glass For an Italian ragù vero you need the passata. Double the amount of meat and let it cook over low heat for 3 hours. Cooking the pasta inside the ragout is chilling. It should never be done. The pasta needs to be cooked in plenty of salted water, uncovered to release the starch. And at the end in the dish you add the parmigiano reggiano which is not going to solve anything. It is noted that when carving the dough, it is very chewy because the previous cooking has not worn out. If you and your family like it, fine, but it's not ragù sauce or anything like that. I hope my comment is a gastronomic contribution and never a destructive criticism.
