Ingredients:
1 tablespoon olive oil
1 tablespoon butter
1 medium onion, thinly sliced
3 cloves garlic, minced
1 (14.5-ounce) can diced tomatoes, undrained
1 teaspoon dried oregano
1/2 teaspoon dried basil
1 teaspoon rosemary finely chopped
Salt and freshly ground black pepper, to taste
1 pound boneless, skinless chicken breasts, cooked and cut into cubes
1 medium eggplant, sliced into 1/2-inch rounds (about3 cups)
1/2 cup shredded part-skim parmesan cheese
1/4 cup chopped fresh basil

I think a lot of us are trying to eat healthier ๐This is an excellent meal. Chicken is always a healthy meat to cook with, if done right. What a great addition it was to this dish, with adding a touch of butter to olive oil for more flavor! Turned out delicious ๐ looking ๐The fresh basil ๐ฟ & fresh Parmesan really enhance this dish!!๐
