Jerk Chicken Paste:
10 garlic cloves
1 cup ginger
½ cup brown sugar
½ cup allspice berries
1 tbsp of cinnamon
½ tbsp of cloves
½ tbsp of nutmeg
3 scotch bonnet peppers or 3 tbsp scotch bonnet hot sauce
4 robust sprigs of thyme
2 scallions
1 bottle Red Stripe
4 tbsp oil

Jerk Chicken Biryani:
6 boneless chicken thighs
1 cup jerk paste (1st recipe)
2 tbsp of jerk seasoning
1 cup julienne onion
2 quarts of cooked brown rice
1 cup of kidney beans
1 coconut milk
1 tbsp brown sugar
¼ cup finely sliced scallions
½ cup avocado oil or preferred
Salt and pepper to taste
12 leaves of cilantro
